Blueberry Buns With a Touch of BlackBerries

Almost Paleo (uses sugar) grain-free buns using coconut flour and flaxseed

Ingredients
  

  • 1/2 cup butter
  • 1/3 cup greek yogurt (11%)
  • 1 cup coconut flour
  • 1/3 cup flaxseed flour
  • 1 cup blueberries
  • 1/8 cup blackberries
  • 1/4 cup cane sugar
  • 1 tsp stevia
  • 2.5 tsp baking power
  • 0.5 tsp baking soda
  • 1-3 pinches salt

Instructions
 

Flours (dry ingredients)

  • Blend together the coconut flour and flaxseed flour with the baking soda, baking powder and dash of salt. I use a whisk. Put aside.

I Like A Lot of Butter

  • Butter should be at room temperature. Cream it first. Then add the yogurt. (The yogurt helps keep it together) Next blend in the sugar and the stevia powder.

Mixing Together.

  • I usually use a pastry cutter for this. Seeing as there is yogurt, you don't have the cubes of butter. Instead fold it all together and blend in the butter/yogurt with a wooden spoon.
    Roll dough into a ball , knead a couple of times. On a "floured" surface (I put a TBSP of coconut flour down), roll out the dough to about 1/2" thickness. A marble surface ideal, if not I also use parchment paper and then you don't need the flour.
    Sprinkle berries on top and gently press down on them. Gentle. Fold the dough over in half so the berries are in there like a sandwich. Very gently pat or roll out the dough again to about 3/4" thickness.
    Use a wide mouth glass to cut out the biscuits. Roll up the remaining bits and shape into buns.

Bake

  • Pre-heat oven to 375 degrees. Place biscuits on a lined (parchment paper or silicone) baking tray and bake until lightly browned. Bake for 10 minutes and then lower 350 degrees for another ~20minutes. Note: Check at 20 minutes overall. They might be done. My oven is persnickety. I test doneness by look: A golden brown top / bottom, and smell.
    NOTE: I've seen recipes where it's a starting point of 400-425 and then obviously less time baking. Takes 10-12 minutes overall. I haven't tried that.

Notes

Editor's note: This recipe is in the experimental stage. Ie: I adapted it loosely from the Joy of Cooking (1970s garage sale version) . The baking time is an estimate. If it's golden brown on top and brown on the bottom, they're ready.
